Siamo is baking pizza perfection

It took a cruise to the Bahamas for Fidel Garcia to truly be fascinated by pizza. On that trip, Siamo’s owner and pizza aficionado first saw the wood-burning oven that would soon become such an immanent part of his life.

A similar oven is the first thing you will see when walking into this contemporary, quaint Miami Springs eatery. This one is a Valoriani, Dal 1890, imported from Firenze, Italy. With a modern appeal, rustic and traditional touches are still there.

The Italian southwestern Naples region inspires the menu, and ingredients used never stray far from the area. An emphasis on pizza is followed, which caters to any age. Even the made to order paninis comprise bread that is hand-made from the pizza dough. All sauces are made from scratch as well, adding to the freshness and distinctiveness that is expected from authentic pizza with the fine-dining flare.

Antipasti includes choices like freshly baked focaccia rosmarino – thin focaccia bread brought to life by a sprinkle of sea salt and rosemary. But warm rotoli, French brie rolled in prosciutto di parma and served alongside roasted red peppers, is a true standout.

Fidel’s flavor combinations are a must for any pizza lover. Dolce? Will leave your sweet tooth guessing. A drizzle of balsamic glaze over mozzarella, feta and prosciutto di parma is pure umami. Or for a touch of green go for the Verde: mixed greens, roasted zucchini, green peppers, olives, arugula and parmesan will make you gladly eat all your veggies, and then some. And don’t forget that freshly made sauce. It’s always a pizza party at Siamo.
